After writing off yesterday's Simnel cake as a write off suitable for family consumption only, I cut all the outside, sticky, toffee/marzipan edge off and  found that it was really lovely in the middle. Oh well, new one's in the oven with a 10" circle of marzipan in the middle instead of 12" in the hope that the cake mixture will seal it in and prevent it seeping out like yesterday. Good job I live among people who are always happy to help in consuming baked goods not quite up to selling standard (and I count myself among that number!). Quality Seconds, I think the term would be.
